Ingredients

  • 1/2 cup Onion, Diced
  • 2 tbsp Celery, Diced
  • 1 tbsp Carrot, Diced
  • 2 tbsp Fresh Ginger, Finely Chopped
  • 1 tsp Sugar or other sweetener
  • 2 tbsp Soy Sauce
  • 2 tsp Lemon Juice
  • 1 tbsp Ketchup
  • 3 tbsp White Vinegar
  • 1 tbsp Water, filtered
  • 1/3 cup Avocado Oil or Light Olive Oil (or any neutral tasting oil)

Instructions

  • Place all ingredients into the blender, Blend until mostly liquified, do not blend until totally liquified so that some texture remains.
  • Store in refrigerator in airtight container or glass bowl with plastic wrap. Let sit at least 3 hours so flavors combine.

Notes

This dressing will last at least 4 or 5 days in refrigerator, be sure to shake or stir before using as it does tend to separate some on day 2.
Taste the final blend and add more sugar or sweetener if desired.
You can use maple syrup or agave instead of sugar, or any replacement for sugar.
One serving size is around 2 tbsp.
