Ingredients

  • 1 lb Chicken Feet
  • 12 cups Water
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Salt
  • 8 tbsp Grass Fed Beef Gelatin Powder

Instructions

  • Place the chicken feet into a large pot and cover completely with water. Add the apple cider vinegar and allow the mixture to sit for about 20 minutes before heating. This helps draw minerals and collagen from the bones. Bring the pot to a gentle boil, then add a few pinches of salt.
  • Reduce the heat to a low simmer and let the broth cook for about 5 or 6 hours. Skim any foam from the surface as needed.
  • Once finished, place a strainer over a large bowl. Remove the chicken feet and ladle the broth through the strainer into the bowl. You should have around 7-8 cups of broth.
  • While the broth is still warm, add 1 tablespoon of beef gelatin powder per cup of broth. Whisk thoroughly until the gelatin is fully dissolved. If using a sweetener or flavoring, stir it in at this stage to taste.
  • Allow the mixture to mostly cool, then pour into silicone molds or onto a lined sheet pan. Transfer to the refrigerator and let set overnight.
  • The next day, remove the gummies from the molds or slice into shapes if using a sheet pan. Store in an airtight container in the refrigerator.

Notes

Make sure the water is enough to fully cover the chicken feet when they are simmering. You will be using 1 tbsp of beef gelatin powder per 1 cup of cooked broth.
Feel free to add in any sweetener or flavoring if you desire, or even some natural coloring!
